Meatballs
2 lbs. ground beef 1 cup cornflakes, measured then crushed 1/3 cup Parsley flakes, dried, or fresh chopped parsley 2 eggs 2 Tbsp soy sauce 1/4 tsp pepper 1 onion 1/2 tsp garlic powder 1/3 cup ketchup
Combine all of the ingredients and mix well, first with a fork then by hand. Shape the mixture into large meatballs almost two inches across. You'll end up with about 20.
Arrange the meatballs in a shallow baking pan such as a cake pan.
Sauce
1 can whole or jellied cranberry sauce 1 1/2 tsp bottled chili sauce 1 1/2 Tbsp brown sugar 1 tsp lemon juice
Combine the sauce ingredients in a saucepan and heat on low until warm. Pour over the meatballs.
Bake, uncovered, at 350F for 30 minutes or until the sauce is bubbling and the meatballs in the of the pan are cooked.
Serves 4 to 6.
